Vegan Chai Vanilla Gingerbread Cookies



Ingredients:
- 1 scoop of our All-in-one shake Chai Vanilla
- ¼ cup almond butter
- 1 tbsp lemon juice
- 2 tbsp maple syrup
- 2 tbsp molasses
- ¼ cup almond milk
- 1 cup all-purpose flour (white or whole-wheat)
- ⅛ cup brown sugar
- 3 tsp cinnamon
- 1 tsp ground ginger
- ¼ tsp ground cloves
- ½ tsp baking soda
- Flour for dusting
- Icing for decoration
How to prepare:
- Preheat the oven to 350F. Line a large baking tray with parchment paper
- In a mixing bowl, combine almond butter, molasses, almond milk, lemon juice and maple syrup. Whisk until combined
- Add flour, Chai Vanilla, sugar, cinnamon, ginger, cloves and baking soda. Mix/knead to form a ball of dough
- Refrigerate dough for 30 minutes
- Dust your working surface with flour
- Roll out dough to ¼ inch thickness and cut cookies into any shape you like
- Use a spatula to carefully transfer the cookies onto the prepared baking sheet
- Bake the cookies for 10-12 minutes, until slightly golden around the edges
- While the cookies are baking, roll out the remaining dough and cut out as many cookies as possible
- When all the cookies are done baking, allow them to cool completely before decorating
- Once decorated, serve the cookies, and enjoy!
