Vegan Chai Vanilla Gingerbread Cookies

Ingredients:
  • 1 scoop of our All-in-one shake Chai Vanilla
  • ¼ cup almond butter
  • 1 tbsp lemon juice
  • 2 tbsp maple syrup
  • 2 tbsp molasses
  • ¼ cup almond milk
  • 1 cup all-purpose flour (white or whole-wheat)
  • ⅛ cup brown sugar
  • 3 tsp cinnamon
  • 1 tsp ground ginger
  • ¼ tsp ground cloves
  • ½ tsp baking soda
  • Flour for dusting 
  • Icing for decoration

How to prepare:

  1. Preheat the oven to 350F. Line a large baking tray with parchment paper
  2.  In a mixing bowl, combine almond butter, molasses, almond milk, lemon juice and maple syrup. Whisk until combined
  3.  Add flour, Chai Vanilla, sugar, cinnamon, ginger, cloves and baking soda. Mix/knead to form a ball of dough
  4. Refrigerate dough for 30 minutes
  5. Dust your working surface with flour
  6. Roll out dough to ¼ inch thickness and cut cookies into any shape you like
  7. Use a spatula to carefully transfer the cookies onto the prepared baking sheet
  8. Bake the cookies for 10-12 minutes, until slightly golden around the edges 
  9. While the cookies are baking, roll out the remaining dough and cut out as many cookies as possible
  10. When all the cookies are done baking, allow them to cool completely before decorating
  11. Once decorated, serve the cookies, and enjoy!
