Pumpkin Protein Oat Squares (Vegan & Gluten-Free)

Ingredients:

  • 2 scoops of our All-in-one shake Creamy Vanilla 
  • 1 cup old-fashioned oats or quick oats
  • 1 tsp baking soda
  • 1 tsp baking powder
  • ½ tsp salt
  • 1 tbsp pumpkin spice
  • ½ tsp cinnamon
  • ¼ cup maple syrup
  • 1 cup pumpkin puree
  • ½ cup almond milk
  • ¼ cup vegan chocolate chips

How to prepare:

  1. Preheat the oven to 180°C (350°F)
  2. Line an 8x8 baking dish with parchment paper
  3. In a bowl, combine all dry ingredients and oats
  4. In another bowl, mix maple syrup, pumpkin puree and almond milk
  5. Add the dry ingredients, half of the chocolate chips, and mix together
  6. Spread the mixture evenly in the prepared dish
  7. Top with remaining chocolate chips
  8. Bake for 30-40 minutes, until the toothpick comes out clean and the sides are slightly crispy
  9. Cut into 9-16 pieces, let cool, and enjoy!
Store in freezer or at room temperature for up to 4 days.
