Protein Almond Banana Muffins

Ingredients

Banana Almond Muffins:

3 bananas

2 eggs (or vegan alternative)

⅓ cup maple syrup

⅓ cup olive oil

1 tbsp. vanilla extract

1 cup banana flour

2 scoops Bananas & Cream All-in-One Shake

1 tsp. baking soda

1 tsp. salt

1 tbsp. apple cider vinegar

⅓ cup shredded almonds

¼ cup almond slivers

Instructions

1. Preheat the oven to 350°F.

2. In a blender, combine the bananas, eggs, olive oil, maple syrup, and vanilla extract. Blend until smooth.

3. In a large mixing bowl, whisk together the banana flour, Bananas & Cream All-in-One Shake, baking soda, salt, and apple cider vinegar.

4. Pour the wet ingredients into the dry ingredients and mix until fully combined.

5. Fold in the shredded almonds.

6. Divide the batter evenly into a muffin tray.

7. Sprinkle almond slivers on top of each muffin.

8. Bake for 30–33 minutes or until a toothpick inserted in the center comes out clean.

9. Let cool before serving.
