Eggnog Protein Sugar Cookies

Ingredients

1/2 cup unsalted butter, melted

1/2 cup granulated sugar + a little extra for rolling the dough balls before baking

1/2 cup powdered sugar

2 eggs

1 tsp. vanilla extract

2 cups all-purpose flour

2 scoops Eggnog All-in-One Shake

1 tsp. nutmeg

1/2 tsp. cinnamon

1 1/2 tsp. baking powder

1/2 tsp. baking soda

1/4 tsp. salt

Instructions

1. Preheat oven to 350°F. Line a baking tray with parchment paper. Set aside.

2. In a small bowl, whisk together the flour, Eggnog All-in-One Shake, nutmeg, cinnamon, baking powder, baking soda, and salt. Set aside.

3. In a large bowl, whisk together the melted butter, granulated sugar, and powdered sugar.

4. Add the eggs and vanilla extract. Whisk until combined.

5. Add the dry mixture to the wet mixture 1/2 cup at a time, mixing until just combined.

6. Chill the dough for 30 minutes.

7. Scoop the dough, roll each ball in granulated sugar, then place on the prepared baking sheet with space between each one.

8. Bake for 11–13 minutes, until the edges are lightly golden and the center no longer looks wet.

9. Cool briefly on the pan, then transfer to a wire rack.
