Pistachio Protein Balls

Ingredients

10 Medjool dates

½ cup pistachios

½ cup shredded coconut

½ cup pumpkin seeds

1 scoop Vanilla Milkshake All-in-One Shake

¼ cup water

½ tsp. vanilla extract

Instructions

1. In a blender, add the Medjool dates, pistachios, shredded coconut, pumpkin seeds, Vanilla Milkshake All-in-One Shake, water, and vanilla extract. Blend until smooth.

2. Roll the mixture into small balls.

3. Coat with shredded pistachios, pumpkin seeds, and coconut.

Garnishes (optional)

Extra shredded coconut

Crushed pistachios

Chopped pumpkin seeds

To Serve

Best enjoyed as a quick snack or energy bite.

Store leftovers in an airtight container in the fridge for up to one week.
