Pink Protein Pancakes

Ingredients

1/3 cup Greek yogurt

1 egg (or vegan alternative)

1 tbsp. vanilla extract

1 cup almond milk

1 cup flour

1 tbsp. baking powder

2 scoops Red Superfood Juice

1 scoop Mixed Berries All-in-One Shake

Instructions

1. In a mixing bowl, whisk together the Greek yogurt, egg, vanilla extract, and almond milk until smooth.

2. Add the flour, baking powder, Red Superfood Juice, and Mixed Berries All-in-One Shake. Stir until just combined. Do not overmix. The batter should be thick but pourable.

3. Heat a non-stick skillet or griddle over medium heat. Lightly grease if needed.

4. Pour about 1/4 cup of batter per pancake onto the skillet. Cook until bubbles form on the surface and the edges look set, about 2–3 minutes.

5. Flip and cook for another 1–2 minutes, until golden and cooked through.

6. Repeat with the remaining batter.
