Protein Breakfast Cookies
Ingredients
2 bananas
1 espresso shot
1/2 cup crunchy almond butter
2 cups oats
1 scoop Mocha All-in-One Shake
1 tbsp. cinnamon
A dash of salt
1 tbsp. maple syrup
1 tbsp. vanilla paste
1/2 cup pumpkin seeds
1/2 cup sliced almonds
1/2 cup dark chocolate chunks
Instructions
1. Preheat the oven to 350°F (175°C). Line a baking sheet or lightly grease a baking dish.
2. In a bowl, mash the bananas with the espresso shot and the crunchy almond butter until smooth.
3. Add the oats, Mocha All-in-One Shake, cinnamon, salt, maple syrup, and vanilla paste. Mix until fully combined.
4. Fold in the pumpkin seeds, sliced almonds, and dark chocolate chunks.
5. Scoop onto the baking sheet and gently flatten with the back of a spoon.
6. Bake for 10–12 minutes, until set.

Let cool slightly, then enjoy! Store in an airtight container at room temperature.
