Maple Cookie Protein Pancakes

Ingredients

1 cup self-rising flour

2 scoops Maple Cookie All-in-One Shake

1 egg (or vegan alternative)

1 cup plant-based milk

Instructions

1. In a bowl, whisk together the flour and Maple Cookie All-in-One Shake.

2. Add the egg and plant-based milk. Whisk until smooth. The batter will be thick—that's what makes them extra fluffy! If needed, add 1–2 tbsp. milk, but keep it thick.

3. Heat a non-stick pan over medium heat and lightly grease if needed.

4. Use an ice cream scoop to portion the batter into the pan for evenly sized pancakes.

5. Cook 2–3 minutes until bubbles form on the surface. Flip, then cover the pan with a lid for a few minutes to help the inside cook through.

6. Cook until golden and set in the centre.

To Serve

Serve warm with butter and maple syrup.
