Lime Chia Protein Muffins
Ingredients
Muffins:
1/2 cup monk fruit sweetener
3 limes
1 egg (or vegan alternative)
1 cup Greek yogurt
1/4 cup almond milk
1 tbsp. apple cider vinegar
1/3 cup olive oil
1 tsp. vanilla extract
1 scoop Vanilla Cupcake All-in-One Shake
1/4 cup Khorasan flour
1/2 tsp. baking soda
1 tsp. baking powder
A pinch of salt
1/8 cup chia seeds
Glaze:
1 scoop Piña Colada All-in-One Shake
1 lime (juiced)
1/3 cup almond milk
Instructions
1. Preheat the oven to 350°F (175°C). Line or grease a muffin tin (makes 12).
2. In a large bowl, rub together the monk fruit sweetener and the zest of 2 limes to release oils.
3. Whisk the egg, Greek yogurt, almond milk, apple cider vinegar, the juice of 1 lime, olive oil, and vanilla extract until smooth.
4. Stir in the Vanilla Cupcake All-in-One Shake, Khorasan flour, baking soda, baking powder, and salt. Mix until just combined.
5. Fold in the chia seeds.
6. Scoop batter into muffin cups and bake for 20–24 minutes, until the tops are golden.
7. For the glaze, whisk together the Piña Colada All-in-One Shake, lime juice, and almond milk until smooth.
