Lemon Blueberry Protein Loaf
Ingredients
½ cup sugar
2 tbsp. lemon zest
1 cup flour
2 scoops Vanilla Milkshake All-in-One Shake
2 tsp. baking powder
¾ cup Greek yogurt
½ cup olive oil
2 eggs (or vegan alternative)
Juice of half a lemon
1 cup frozen wild blueberries
Instructions
1. Preheat the oven to 350°F. Oil a loaf pan and lightly flour it.
2. In a small bowl or plate, combine ½ cup sugar and 2 tbsp. lemon zest. Rub together with your hands until fragrant and slightly moist.
3. In a large bowl, add 1 cup flour, 2 scoops Vanilla Milkshake All-in-One Shake, and 2 tsp. baking powder. Mix to combine.
4. Add the lemon sugar mixture into the dry ingredients and mix evenly.
5. Add the ¾ cup Greek yogurt, ½ cup olive oil, and 2 eggs directly into the same bowl. Mix until mostly combined.
6. Add the juice of half a lemon and mix until a smooth batter forms. Do not overmix.
7. Gently fold in 1 cup frozen wild blueberries.
8. Transfer the batter to the prepared loaf pan and smooth the top.
9. Bake for 45–50 minutes, or until a toothpick inserted comes out clean.

Let cool completely. Dust with powdered sugar before serving.
