Ingredients
1 cup unsweetened shredded coconut
1 cup pecans
2 scoops Vanilla Cupcake All-in-One Shake
¼ cup shredded carrots
¼ cup tahini
¼ cup maple syrup
1 tsp. vanilla extract
Extra shredded coconut (for rolling)
Instructions
1. In a blender, add 1 cup unsweetened shredded coconut, 1 cup pecans, 2 scoops Vanilla Cupcake All-in-One Shake, ¼ cup shredded carrots, ¼ cup tahini, ¼ cup maple syrup, and 1 tsp. vanilla extract. Blend until combined.
2. Roll the mixture into balls. Add extra coconut shreds to a small bowl. Roll each ball in the coconut to cover the outer sides.
3. Place balls on a plate. Store in the fridge and enjoy!
